A tale of two rivers. He Jiang comes to Hong Kong, featuring native chefs and authentic recipes from the cradles of Sichuan and Huayang cuisine… 

Elite Concepts, creator of Michelin Star establishments Ye Shanghai and Nanhai No.1, is delighted to introduce a new culinary masterpiece to Hong Kong’s dining scene. Overlooking Causeway Bay and the Happy Valley Racecourse, He Jiang at the Cosmopolitan Hotel offers a unique blend of Sichuan and Huaiyang cuisines, gathering the most sought-after delicacies from the convergence of the Yangtze and Chisui rivers into one lovingly crafted menu.

Sichuan and Huaiyang cuisines are strikingly different. Know as the “region of a hundred tastes”, Sichuan cuisine is renowned for its spectacular variety of flavours, spices, chillies and peppers, ideal for those craving a spicy kick. Try the superb Crab with Homemade Sauce (HK$330) or Dry Sauteed Prawns (HK$100/piece), artfully prepared in ancient 'Lao Tan Zi' style by executive chef Chef Zhao Li, featuring a special sauce made from preserved vegetables soaked in ice water from E Mei Shan, on of China’s holy mountains, for two years. Wow!

Huaiyang cuisine emphasizes the freshness and natural flavours of ingredients, with a lovely light, sweet tang. Fresh river fish, vegetables in season and ingredients at their best epitomise Head Chef Kung Ping’s meticulous craftsmanship, skillful creations and immaculate attention to detail. Highly recommended are the Sautéed Minced Pork with Persevered Vegetables served with Sesame Pastry Pockets ($98) and the stand out d Tea-Leaf Smoked Eel (HK$400) made with painstakingly deboned river eels, a specialty which must be ordered in advance. For a tipple, we recommend the 20-year Premium Taidiao Wine (HK$220 per bottle), silky smooth at room temperature… the perfect match for seafood and crab dishes!

Unlike most restaurants in Hong Kong, He Jiang has lured veteran natives of both provinces to head up their respective menus. These chefs have been hard at work and play to recreate the tastes of home, ensuring native ingredients are freshly imported in season and adding a new spin on age-old recipes for the modern palate.
